The One Caviar Mistake That Ruins the Whole Tin: Heat
This is the single most common way a good tin gets wasted on a hot dish or warm plate.
The problem
Heat breaks down the delicate eggs, kills the texture, and turns a HK$-per-gram product into an oily, flat disappointment.
The fix
Always serve cold, on chilled plates, straight from the fridge. Never anywhere near a hot dish, hot toast, or warm blini. If you remember only one caviar rule, make it this one.
